- 2 teaspoons olive oil
- 1⁄2 onion, chopped
- 3 cups diced pumpkin
- 1⁄4 red capsicum, diced
- 1 tablespoon sweet chili sauce
- 1⁄2 cup water
- pepper, to taste
directions
- Heat oil in saucepan and add onion, pumpkin, and capsicum.
- Stir-fry for 2 minutes.
- Stir in sweet chilli sauce and water.
- Cover and cook gently 10 minutes. Season with pepper.
- Serve over a split baked potato.
