  • Sauté chicken with pepper, onion and garlic until chicken is no longer pink.
  • Add tomatoes, picante sauce, beans and spices.
  • Simmer 20 minutes.
  • Serve over rice.
  • Garnish with additional picante sauce, shredded cheese, sour cream and scallions as desired.
