Chicken Salad With Wonton Strips

- 10 wonton wrappers, cut into 1/4 inch strips
- 1⁄4 cup cider vinegar
- 3 tablespoons canola oil
- 3⁄4 teaspoon sesame oil
- 2 tablespoons sugar
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 5 cups torn romaine lettuce
- 3 cups cubed cooked chicken breasts
- 1 red pepper
- 1 yellow pepper
- 1 cup cucumber
directions
- Lightly spritz both sides of wonton strips with nonstick cooking spray; place on baking sheet. Broil 4-6 inches from heat for 2-3 minutes or until golden brown. Turn strips over, repeat. Remove to wire rack to cool.
- Cook chicken. Grilling and baking both work fine.
- For dressing, whisk vinegar, oils, sugar, salt and pepper together; set aside.
- In large bowl, combine salad ingredients, chicken. Just before serving drizzle with dressing and toss to coat. Top with wonton strips.

I'm a senior at the University of Wisconsin-Madison, getting a degree in polisci. My resolution this year is to cook at least three meals for myself every week, with at least one new recipe every week; hopefully I stick to it!
My kitchen is tiny and the appliances are ancient; the oven has half the space of my parents' standard oven and is an ill-tempered old electric monster, the fridge has only a thin panel separating the freezer from the rest, and the sink has . . . issues. To say nothing about the counter space, or cupboard room. So I call it my shoebox kitchen, and do my best to work around it.
I eat very little meat and would go straight-up vegetarian if it weren't for the significant problems posed by my deep-set hatred for most types of beans. I also have a weird adversion to raw tomato, and most types of pasta.
