- 2 boneless skinless chicken breasts, cut into cubes
- 1⁄2 tablespoon olive oil
- 1 chopped small onion
- 1⁄2 chopped red bell pepper
- 1⁄2 chopped green bell pepper
- 2 minced garlic cloves
- 1⁄2 lb mushroom, sliced
- 1 cup ketchup
- 1 cup chicken broth
- 1⁄2 tablespoon Worcestershire sauce
- 3⁄8 tablespoon ground black pepper
- 2⁄3 cup rice
directions
- Preheat oven to 350 degrees F.
- Spread the rice in a baking dish & place cubed chicken on top and set aside.
- In a skillet, saute onion, bell peppers, garlic, and mushrooms in olive oil until golden brown.
- In a bowl, combine ketchup, chicken broth, Worcestershire sauce, and pepper.
- Pour this mixture over the sauteed vegetables in the skillet & bring to a boil, then pour mixture over the chicken.
- Place chicken dish in the oven and bake 1 hour covered. Remove cover and bake until the liquid evaporates (approx another 15-30 minutes).
