  • In a large bowl, mix well salsa and drained chicken (mix well enough to break up any large chunks of meat).
  • Place large spoonful in center of tortilla.
  • Top with shredded cheese.
  • Spread out evenly--avoid getting too close to edges of tortilla.
  • Either fold in half and grill about 4-5 minutes on George Foreman-type grill.
  • OR:

  • Roll up and fry or bake until golden and crispy.

  1. These are yummy! I travel for work and this is a meal I can plan for the hubby and kids to make. I use a sundried-tomato flour tortillia and add green chilies to the mix. I cant find velveta cheese shredded, so I just used a mexican blend shredded cheese and it works fine. Thanks for posting!
     
  2. These were delicous! Like one of the reviews before, I added black olives and sauted peppers and onions. I used shredded chedder instead of velveta. I sprayed the pan with cooking spray and fried them up. I served with sour cream for dipping. I will be making them again!!
     
  3. YUMMY! These are so good! I used leftover chicken I had instead of the canned chicken but I'm sure it tastes good either way! Another great tasting, quick dinner for the weeknight, or any time! Thanks!
     
  4. I am so proud I found this recipe! It will be repeated for sure. I did make several changes to use what I had on hand, but stayed within the spirit of the recipe. I poached 4 large, bone in chicken breasts, deboned, and let cool. Dinner was then easy to assemble. To the cooled chicken I added 1/2 of an onion, 1/2 of a green pepper, a small can of black olives, and used cheddar cheese rather than the velvetta. I stirred the cheese in and spooned approx 1/2 cup of the mixture into each tortilla. The package of tortillas were burrito size, but 10 count. I rolled them up tightly and cooked in a skillet until the outsides were crispy. Served with guacomole, salsa, and sour cream. Yum! Thank you for sharing your recipe!
     
  5. It just doesn't get much easier than this. Wonderful flavor for such a simple meal. I had some left-over chicken in the freezer and used my homemade salsa for this, used a 4 combination of cheese and topped off with sour cream and extra salsa for a really quick dinner last night. Thanks

I am the mother of three beautiful children, two boys and a baby girl. Between them and my awesome husband of 8 years, I'm one of the most greatful people you'll ever meet! I love photography expecially Black and White, good T.V. series, and COOKING!!! My only down fall is my mother raised me a picky eater, I wish I had the courage to try so many different foods. I love the cookbook with the recipes from the backs of labels, can't think of the name. I also love looking thru friends and family members recipe boxes!! We own a Floor maintence business where it seems I spend 25 hours a day! actually it's more like 12 but by the time I get home it feels that way, and for that reason alone I love, love, love my slow-cooker. Sundays I try to go all out and make something extra special. I love to read, I love to cook and I love to play firefighter with my kids and the water hose in the front yard on a sunny day! I have so many pet peeves it's sad, for starters I hate rude fast food employees, people who see you waiting to get by and just stand in the way. I can't stand when people zoom out in traffic like they really have somewhere to get then just mosey along going 5 miles below the limit then turn off with no blinker, or when people call my phone number and ask "who's this?" like I called them!!?? whats that about? anywayz, I could go on and on.... I'm happy to have found Zaar and wish I would have sooner. Love the recipes, the people and the pictures! God bless the creaters of Recipezaar, I LUV YOU!!!
