Chicken Breasts with Cheese, Mushrooms & Onions

- 1⁄2 cup flour
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 teaspoons chopped parsley
- 1 teaspoon dill weed
- 4 chicken breasts, about 1/4 inch thick
- 4 tablespoons butter
- 1 lb fresh mushrooms, sliced (BABY PORTOBELLA OR WHITE BUTTON)
- 1 onion, thinly sliced
- 1⁄2 cup dry white wine
- 1⁄2 lb mozzarella cheese, shredded
- freshly grated parmesan cheese
directions
- PREHEAT OVER TO 350.
- COMBINE FLOUR WITH SALT, PEPPER, PARSLEY, AND DILL WEED.
- LIGHTLY DREDGE CHICKEN IN FLOUR MIX.
- IN LARGE HEAVY SKILLET MELT 2 TBLS BUTTER.
- ON MEDIUM HEAT, SAUTE CHICKEN TILL BROWN ON BOTH SIDES.
- REMOVE CHICKEN TO GLASS BAKING DISH.
- ADD ANOTHER 2 TBLS BUTTER TO SKILLET.
- SAUTE MUSHROOMS AND ONIONS UNTIL ONIONS ARE A VERY LIGHT BROWN COLOR.
- ADD WINE.
- REDUCE HEAT AND SIMMER ABOUT 3 MINUTES.
- POUR MIXTURE OVER CHICKEN AND COVER.
- BAKE 20 MINUTES.
- REMOVE COVER AND SPRINKLE CHEESE ON TOP.
- BAKE FOR 10 MINUTES UNCOVERED UNTIL CHEESE IS MELTED AND BUBBLY.
- SERVE OVER RICE OR WITH MASHED POTATOES.
- PASS PARMIGANA CHEESE, IF DESIRED.

I was not a fan of this. I was looking for more flavor. I had to use chicken broth like another suggested since I had no wine, so that may have had something to do with it. Next time, I will sauté the onions and mushrooms and top a grilled breast with it and the cheese. I think grilling would really make this combination better.

Update: My mother, BoxO'Wine passed away on April 23, 2009 after a 2 year battle with pancreatic cancer. She was a wonderful cook and is greatly missed. I am the DD that she has mentioned here quite frequently and have decided to continue her account. I also use RecipeZaar quite frequently as I learned about it from her. I strive to make her recipes; however, they will never be the same. I am also leaving all her own biographical information in here that she had.
Genuine Jersey Girl here. Lived here all my life with the exception of a short stint in the Bay Area/San Francisco. Married to the same guy for over 40 years. We have 3 children and 5 grandchildren. My son lives in Georgia (he talks funny) and my two daughters live near me in New Jersey. I am a retired politician, but I still have a real job.
