- 1 (8 ounce) can tomato sauce
- 1⁄2 cup ketchup (I use reduce sugar ketchup)
- 2 tablespoons Splenda brown sugar blend (equals 4tbsp regular brown sugar)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon cider vinegar or 1 tablespoon red wine vinegar
- 1⁄2 - 1 tablespoon honey
- 1⁄2 teaspoon liquid smoke
- 1 1⁄2 teaspoons chili powder
- 1 teaspoon onion powder
- 1⁄2 teaspoon ground mustard
- 1⁄4 - 1⁄2 teaspoon garlic powder
- salt & pepper, to taste
- 5 boneless skinless chicken thighs
- hamburger bun, to serve
directions
- Mix all the ingredients together in a bowl except the chicken & buns.
- Place the chicken into a crock pot then pour the sauce over until the chicken is smothered. Cover with the lid & cook on low for 5-6 hours.
- Shredded the chicken with a fork then scoop the mixture onto the buns.

This was so easy (and I made it even easier my trying those slow cooker liners that Reynolds makes, so I had no cleanup either)! I used 8 thin-sliced chicken breasts, because that is what I had in the freezer. I used 3-1/2 T. of brown sugar, which seemed just right. When the chicken was first done, I noticed that sauce seemed very watery. However, as I shredded the chicken, it absorbed most of the liquid, keeping it moist and tasty, so it was just perfect. Not only did I make sandwiches with this, but I reheated the chicken and served it over brown rice with asparagus for a quick dinner. Thanks for sharing this!
