Chicken and Chickpeas Tagine

- 1 lb chicken breast
- 1⁄2 large onion
- 1 tablespoon garlic
- 1 tablespoon fresh grated gingerroot
- 1 teaspoon cumin
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon coriander
- 1 dash cayenne pepper
- 1 teaspoon turmeric
- salt and pepper
- 1⁄4 cup sliced green olives
- 2 tablespoons fresh squeezed lemon juice
- 1 (15 ounce) can chicken broth
directions
- Dice chicken into bite-sized pieces and sautee until lightly browned over med high heat. Add onion and sautee until translucent, add garlic, ginger and spices and saute for a couple more minutes. Add olives, potatoes, lemon juice chicken broth and chickpeas. Reduce heat to low and simmer 45 minutes or until potatoes are tender. Serve over couscous.
