Chewy Cranberry Oatmeal Cookies

3 1/2 dozen cookies
ingredients
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 2 1⁄2 cups old fashioned oats
- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1⁄2 cup granulated sugar
- 2 large eggs
- 1 tablespoon honey
- 2 teaspoons pure vanilla extract
- 1 1⁄3 cups dried cranberries
- 1 cup semisweet chocolate chunk
directions
- Preheat oven to 350 degrees.
- Cover two cookie sheets with parchment paper.
- In medium bowl mix flour, baking soda, salt and cinnamon and stir in oats.
- Set aside.
- With an electric mixer, beat the butter and both sugars until light and fluffy.
- Beat in eggs one at a time.
- Add honey and vanilla and beat until blended.
- Add the flour mixture in two additions, beating until well combined.
- Stir in cranberries and chocolate chunks.
- Drop the dough by heaping tablespoons about 2 inches apart onto the cookie sheets.
- Bake until the centers of the cookies are soft, about 9 to 11 minutes.
- Let cool on the sheets for 5 minutes then transfer to wire rack to cool completely.

This is a no nonsense recipe. Absolutely sinfully delicious!!! My husband wakes up in the middle of the night just to dig into the cookie jar (LOL). Since we prefer semi-sweet cookies, I reduced the chocolate chips to 1/2 cup, added 1/2 cup chopped walnuts, and omitted the honey. And to retain its chewiness, add a yolk in the mixture. The following day, I taught my friend how to do it. Since she has a sweet tooth, we increased the chocolate chips to 3/4 cups and used raisins and chopped cashews. She was the star in her office the following day.

DO NOT mix the butter and sugar until fluffy. It makes the cookies more like light fluffy cake. These ARE NOT chewy at all, they're soft. Chewy cookies are like soft n chewy chocolate chip cookies, ie: the cookie dough part of the cookie is what is supposed to be chewy, NOT the cranberries/raisens or what other stuff you put in the cookie batter. Just mix till blended, you might get that cookie texture your looking for. The way the recipe instructs now, they're cake-cookies. These would be perfect for seniors since they're so soft(but omitt the chocolate)..

Good cookies. Easy to make. I got 52 cookies. The first 18 baked for 10 minutes and I found them a little too soft. Baked the rest of the cookies for 12 minutes and that was perfect. They were then crispy at the edges and soft and chewy in the middle. Also, I replaced the cinnamon and vanila extract with 3 tsp ground ginger (we prefer ginger to cinnamon in cookies). Next time I make these I will skip the chocolate chunks and use all cranberries instead. They (the cranberries) "made" the cookies. Thanks for posting.
