directions

  • Heat broth, onions, and broccoli to boiling.
  • Reduce heat and simmer 10 minutes.
  • Stir in potatoes, mix well.
  • Add remaining ingredients.
  • Cook on low for 5 minutes.
  • For creamier soup, puree half in blender and return to pot and heat through.

  3. This was a marvelous, quick, and easy soup recipe, due to the use of instant mashed potatoes. I did make some minor changes though. I left out the chicken and salt, and I changed the cheese to mild cheddar. I also used skim milk and low salt broth; but the soup was still creamy and delicious. My daughter and husband raved about it too!

  5. This is an awesome soup. I never would have thought to use swiss, but I don't see why not! It is wonderful! I have since branched out with it to add several types of cheese per batch, my favorite combo being swiss, extra sharp white cheddar, and havarti. Sometimes I use neufchatel cheese in place of a little of the milk. I don't always put in the chicken, since I have a bit extra cheese in it this way, but it is so filling with Irish Soda Bread!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
