Cheaters Marzipan

- 2 cups almonds or 2 cups slivered almonds
- 2 cups confectioners' sugar
- 2 teaspoons almond extract
- 2 teaspoons corn syrup
- 1 egg white, lightly beaten
directions
- If using whole almonds; In a bowl, cover almonds with boiling water, and let them stand for 2 minutes. Drain and skin. If using slivered almonds, skip this step.
- In a food prcessor, grind the almonds until fine. Add sugar, and process until blended. Add extract and corn syrup, combine.
- With motor running, add in enough egg white to keep it all together tightly when pressed.
- Wrap in plastic and place in a zipper bag, refrigerate for at least 2 hours.
