Charishma's Gur Ki Roti With Khoya

"This roti or Indian flatbread is a super favourite with my husband and my father too. It is not so easy at all to prepare it and it can be a messy affair. However, it tastes really nice and is a "must-have" in our household as a comfort food, snack or a breakfast too. Do try it and enjoy it!"

  • 1. Put the whole wheat flour in a big vessel to knead.
  • 2. Add salt and 3 tbsp of ghee. Mix well using your fingers.
  • 3. Add warm water, as required, and knead well till you obtain a soft dough.
  • 4. Keep the prepared dough aside for 20 minutes so that it can ferment and you can prepare soft rotis.
  • 5. Grate jaggery and dried milk powder. Mix thoroughly in a separate bowl. Add the finely ground green cardamoms to it.
  • 6. Pre-heat a non-stick pan.
  • 7. Pinch off a little amount of dough (about the size of a guava).
  • 8. Roll it to prepare a roti.
  • 9. Stuff the center portion of the roti with the jaggery-khoya-dessicated coconut mixture.
  • 10. Apply a little ghee on the inner sides of the roti, then seal it from all four sides towards the center to close it. Close the stuffed roti properly.
  • 11. Apply a little flour on the board and roll the roti out carefully to about 4 inch diameter size ensuring that you are gentle so that it does not break.
  • 12. Place the roti on the pre-heated non-stick pan.
  • 13. Allow to cook till it turns slightly brownish, then apply some ghee (melted) and spread it all over the roti.
  • 14. Flip to cook on the other side. Again, apply some ghee, and allow to cook till lightly brownish spots appear.
  • 15. Place on a plate and serve hot.
