ingredients
- 1 cup sugar
- 1⁄2 cup canola oil mayonnaise (spread)
- 1 cup canned pumpkin
- 1 egg
- 1 teaspoon orange zest
- 2 cups oats, uncooked
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 cup chopped pitted prune
- 1⁄4 cup chopped walnuts
- 1⁄2 cup powdered sugar
- 1 tablespoon orange juice
directions
- Beat sugar and oil in large bowl until well blended; add pumpkin, egg and orange peel and beat well.
- Add combined oats, flour, cinnamon, baking soda and salt, stir well.
- Fold in prunes and walnuts.
- Drop by tablespoonfuls about 2 inches apart onto cookie sheet lightly coated with cooking spray.
- Bake at 350 degrees 11-13 minutes or until lightly browned.
- Cool completely, then drizzle glaze in strips. (blend powdered sugar and orange juice to make glaze).

This is certainly a different way for me to make oatmeal cookies, what with the pumpkin, orange & prunes ~ Different & oh so tasty! Loved the final product & will definitely be making them again! And, as many smoothies as we consume, I'm intrigued with Toni in Colorado's using a couple in her smoothies! Many thanks for sharing the recipe!
