  • Cook the carrots and leek in a saucepan of boiling salted water for 5-6 minutes. Drain well and transfer to a shallow baking dish.
  • Mix together the orange juice, honey, garlic, mixed spice and thyme and pour the mixture over the vegetables. Add salt and pepper to taste.
  • Cover the baking dish and bake at 350F for 30 minutes or until vegetables are tender.
  • Remove the lid and sprinkle with poppy seeds. Sprinkle with orange zest.
