Carrot and Poppy Seed Bake

- 1 1⁄2 lbs carrots, cut into thin strips
- 1 leek, sliced
- 1 1⁄4 cups fresh orange juice
- 2 tablespoons clear honey
- 1 garlic clove, crushed
- 1 teaspoon mixed spice
- 2 teaspoons thyme, chopped
- 1 tablespoon poppy seed
- salt
- pepper
- 2 teaspoons orange zest
directions
- Cook the carrots and leek in a saucepan of boiling salted water for 5-6 minutes. Drain well and transfer to a shallow baking dish.
- Mix together the orange juice, honey, garlic, mixed spice and thyme and pour the mixture over the vegetables. Add salt and pepper to taste.
- Cover the baking dish and bake at 350F for 30 minutes or until vegetables are tender.
- Remove the lid and sprinkle with poppy seeds. Sprinkle with orange zest.
