FOR THE SALAD
- 6 basil leaves, slivered
- salt, to taste
- 1 bunch chives, chopped
- 2 ounces virgin olive oil
- 1 ounce champagne vinegar
- 6 plum tomatoes, chopped
- fresh ground black pepper
- 2 mangoes, pitted and sliced

FOR THE RUB
- 2 whole nutmegs, freshly grated
- 2 cinnamon sticks
- 1⁄2 ounce whole cloves
- 1⁄2 ounce fennel seed
- 1⁄2 ounce black peppercorns
- 4 thick tuna steaks

FOR THE SALAD:
- Combine all ingredients and allow to marinate in the refrigerator for 4 hours.

Meanwhile, prepare the rub:

FOR THE RUB:
- Place the cinnamon sticks, cloves, fennel seeds and peppercorns in a spice grinder or coffee grinder. Process until finely ground.
- Add the freshly grated nutmeg and combine well.

FOR THE FISH:
- Coat the fish with the spice rub and pan sear to rare or medium rare.
- Serve immediately, with the mango salad on top and alongside.
