Camote Almendrado - Sweet Potato With Almonds

- 1 lb sweet potato
- 1⁄2 lb sugar (Personally, I'd use Stevia to flavor, but you wouldn't need much!)
- 8 ounces almonds
- 1 cup milk
directions
- Cook the sweet potatoes (with peel) for 40 minutes on a medium flame. When they’re ready, remove the pot from the flame, peel and press them using a strainer.
- Put it in a pot and pour the milk. Mix it well. Cook on a low flame and add the sugar. (it will be 40 minutes, more or less).
- When it’s ready, remove from the flame and add the peeled almonds (ground, if you want), beating some minutes until the sweet potato and the almonds get well mixed.
