Calico Bean Pot

"My favorite bean casserole!!! I've taken this to many potlucks & picnics, & there's never a bean left. Everyone asks for this recipe. This is from 'The Best of the Best' cookbook. I always double this recipe & use a large crock pot; I cook for the same length of time listed below."

  • Cut bacon into small pieces& fry till crisp.
  • Remove from pan.
  • Cook onion until soft in bacon grease.
  • Put all ingredients into 2 1/2 qt casserole.
  • Bake at 350 F for 1 hour.
  • If you want them a little drier, don't cover.
  • I prefer mine saucier, so I cover them.
  • You may also cook in your crockpot for 4-5 hours, on low.

  3. I made this yesterday for a party and it was wonderful. I remember mom making this with dry lima beans and bacon across the top alot saucier so instead of the ketchup mentioned in the reviews, i added what i think Mom used , a large can of whole tomatoes and broke them apart. It was very saucy and got rave reviews oh i left out the green beans but making it again today since my hubby loved it at the party and didn't really want to share. Thanks for the recipe ! :)
     
  4. I have not yet made this, but I plan to make it over the holidays. I have a question: does the bacon grease go in the pot? I plan to double the recipe for a potluck. Has anyone done this? How long does it take to heat if you double it? Kathleen
     
  5. Thanks for the recipe. I have a similar one (no green beans, only 1/2 cup brown sugar, 1 teaspoon vinegar & 1 teaspoon prepared mustard, add 1/2 lb ground beef and the 1/2 cup ketchup as in earlier review.) It is outstanding even for those who don't like lima beans.
