  • Place 500ml of buttermilk, jalapeño, garlic, lime rind and juice, coriander onion, salt and pepper and process until combined.
  • Place steak in marinade and refrigerate for one hour.
  • Preheat chargrill to high. Remove steak from marinade, brush with oil.
  • Cook for six minutes, turn and cook for a further 6 minutes.
  • Slice the steak and serve with remaing buttermilk, fresh sliced jalapeños and any other accompaniments you desire.
