Butter-Basted Potatoes

"Recipe from my local grocery store that looked so tasty on the recipe card but I didn't get to taste it, as it wasn't done yet. UPDATE since I first posted: I just made this recipe and have now cut the butter back to 1/2 of what was listed, so if you love a ton of butter use 4 tablespoons, but I used 6 potatoes (which they are not that large) with the 4 tablespoons and could have had it with alot less. I also cooked it longer than 15 minutes to get the bacon crisper (probably 20-25 minutes), but they were then cooked perfectly!!"

Ready In:




  • Preheat oven to 475°F Cut potatoes into quarters; place in microwave-safe bowl. Top with butter; cover and microwave on HIGH 5 minutes. Meanwhile, slice onion thinly.
  • Stir potatoes to evenly coat with butter; microwave 5 more minutes or until potatoes are hot and just beginning to soften.
  • Transfer potatoes to 2-quart baking dish and arrange in single layer. Sprinkle with seasoned salt and pepper. Arrange onion slices evenly over potatoes; top with bacon slices. Bake 15-25 minutes or until potatoes are tender and bacon is browned and semi-crisp. Serve. (Makes 6 servings.).

    Fantastic!!! Simple to make and oh sooooo good. The microwave cuts down the cook time nicely, I did bake an extra 10-15 minutes to crisp up the bacon. This was enjoyed by all and I will surely keep this recipe handy!! Thank you!!

    I think I cut the potatoes wrong, but, WHO CARES? OMGooness, were they good! :-) I savored every last bite, and I'm sorry I didn't make the whole recipe, 'cause then, I'd have leftovers to look forward to....They were super simple, which is great for a week night, with most of the work done in the microwave. I also cooked mine for about 30 minutes, to crisp the bacon. The resulting potatoes are luscious in their 'butter-iness'; it really permeates them. Thanks so much for sharing, diner!

    Great taste with minimum fuss. I cut this recipe in 1/2 and in place of the bacon I used Tastefully Simple's Bacon Bacon over the top. Broiled for about two minutes at the end to give em a nice crispy coat. MMMmmm, what a nice side dish. Made for HolidayTag.

    This worked well for me and was served as a side to rack of veal . It was easy to do and giving the potatoes a good go in the microwave first guarantees they will be done perfectly - nothing worse than serving underdone taties and then having to wait ages while they go back in the oven so I was well pleased with this result.

    Delicious! I halved the recipe, and my potatoes turned out wonderfully browned and the bacon was crisp and perfect. I was surprised how nicely it crisped up, but the potatoes acted almost like a "rack" so both sides were nice and crisp. I was amazed at how much flavor these potatoes had!
