Broiled Tomato Cheese Sandwich

- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar (less if you use other vinegar)
- 3 -4 tomatoes, sliced, they must be ripe and have a good flavor
- 3 tablespoons mayonnaise
- 3 -4 tablespoons grated parmesan cheese (other cheese works well too)
- 1 tablespoon basil, finely chopped (1/2 teaspoon dried basil can be substituted)
- 1⁄4 teaspoon dried oregano
- ground black pepper
- 3 -4 tablespoons grated parmesan cheese, for topping
- 4 slices bread, lightly toasted, for a closed sandwich toast 4 more slices
directions
- Preheat broil/grill.
- In a shallow bowl whisk together the olive oil and balsamic vinegar, add the tomatoes and mix gently, set aside.
- In a small bowl mix together: mayonnaise, cheese, basil, oregano and black pepper.
- Spread this on the 4 slices of toast.
- Place on a baking sheet and broil until the cheese is melted and bubbly.
- Remove from the broil, top with the (drained) tomato slices and then with the rest of the Parmesan cheese, return to the oven and broil for approx 5 minutes.
- Serve open or closed.

This made a nice lunch, with good flavors. I think most of the pictures were taken with cheeses other than parmesan. We grated fresh parmesan and didn't get any of the bubbling/melting - but they were still quite good. I had some leftover caramelized onions that I added to some of these, and that made them even yummier.

These were out of this world delicious! I had cut the tomatoes in the morning and used a good balsamic vinegar and good olive oil and marinated them until lunch time. I think using a good quality makes a difference for the taste, in my opinion anyway. Mixed up the mayo mixture and then brought everything to work to finish off there for lunch. I used fresh basil. Then I mixed a bit of mozzarella with the parmesan for the top with a bit more basil. I used the broil on low and it turned out fantastic. Thanks for sharing this yummy recipe Pets'R'us

Oh my goodness! This is AMAZING!!! Quite a treat! I only made half the recipe and I wish I had made more (and it was just for me!!!) I used light mayo, fresh torn basil and added a bit of rosemary and more basil on top! Thanks for this great sandwich that I will eat again and again! Thanks for posting! We've been hovering around 100° the last few days and this was the perfect recipe for a light, but delicious dinner. I used fresh basil and mozzarella instead of Parmesan, so that DH would eat it too. The balsamic marinated tomatoes were over-the-top good! Even my toddler ate this & that was the last thing I expected to see. I'm thankful Annelies took time to post this recipe and we will remember her fondly every time we make it. Made and enjoyed for the Cook-A-Thon in her memory.

My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!!
It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name.
My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!!
I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language!
I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy)
Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor.
Besides cooking she has other interests too, crafts, gardening and soap making.
She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
