Bread Machine Spelt Bread

"Wheat free but does use gluten. Makes a 2 lb loaf. My daughter has a wheat allergy amongst many others and she loves this bread. I prefer the whole spelt flour. Increasing gluten slightly to 1/4 cup can result in lighter loaf, but it may fall. Water may have to be increased if dough is too dry."

  • 1 38 cups water (11 oz)
  • 14 cup unbleached cane sugar
  • 4 cups spelt flour
  • 1 12 teaspoons salt
  • 3 tablespoons wheat gluten
  • 2 teaspoons yeast

  • Place items in bread maker in order given or according to machine instructions and set to wholewheat/light crust setting.
