Boca 'skinny' Nachos

- 6 (6 inch) flour tortillas, each cut into 8 wedges
- 1 (12 ounce) package frozen Boca meatless ground burger
- 1 cup chopped tomato
- 1⁄2 cup finely chopped onion
- 1 garlic clove, minced
- 1 teaspoon dried oregano leaves
- 1 teaspoon crushed red pepper flakes
- 3⁄4 cup shredded reduced-fat cheddar cheese
directions
- PREHEAT oven to 350°F Spread tortilla wedges onto baking sheet; spray with cooking spray. Bake 5 minute or until lightly browned. Set aside to cool.
- MEANWHILE, mix ground burger, tomatoes, onion, garlic, oregano and crushed red pepper in nonstick skillet; cook on medium heat 5 minute or until heated through, stirring occasionally.
- ARRANGE 8 of the chips on each of 6 serving plates; top with 1/2 cup of the ground burger mixture and 2 tablespoons of the cheese.
- -----You can also add your favorite toppings such as vegetarian refried beans, sour cream, avocado and olives.

Just started cookin properly about 6 months ago when I moved in with my DP. As he couldn't cook and I refuse to eat out every day I had no choice! But of course now I've learned to love it!!
