Bleu Cheese Log (Or Ball)

ingredients
- 8 ounces Roquefort cheese (or any bleu veined cheese) or 8 ounces gorgonzola (or any bleu veined cheese)
- 8 ounces grated cheddar cheese (I use sharp or medium)
- 8 ounces cream cheese, at room temperature
- chopped walnuts, pecans, pistachios, cashews or toasted whole pine nuts
- 1⁄4 cup chopped fresh parsley
- paprika (optional)
directions
- Blend the 3 cheeses together until smooth. Roll into a log or ball. On a piece of waxed paper mix parsley and finely chopped nuts. Roll log or ball in parsley mixture to coat. If using paprika, skip nuts and parsley and sprinkle paprika on waxed paper and roll log or ball to coat. Wrap well in waxed paper and refrigerate from 2 to 24 hours. Serve with crackers.
