- 1 lb black beans
- 4 ounces olive oil
- 1 large yellow onion, diced
- 1 teaspoon minced garlic
- 1 large green bell pepper, diced
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon white vinegar
- 1 ounce diced pimento
directions
- Pick through beans and wash thoroughly.
- Soak beans in cold water for 1 to 2 hours.
- Drain and place in a pot and cover with fresh water.
- Cook covered on medium heat until beans are tender.
- Drain any remaining liquid and add remaining ingredients.
- Cook for 15 minutes or until onions are just tender.
