Bil's Puerto Rican Rice and Cheese

"I came on this by accident when I added a little goat cheese to left over Puerto Rician Rice.. I tried it 3-4 times and came up with this recipe. I found that adding the cheddar and the goat cheese gave it a great bite and texture. I used sorrento cheddar in the plastic bag. You may have to go to a store like Good Foods or a speciality store to get the Adobo seasons.The Smithfield Ham can be found in most grocery stores in the Deli section. get them to slice 1 slice of ham1/2 inch thick. Its wonderful ham. I like brown rice becausee its so good for you. Please enjoy and let me know if you have suggestions."

  • In a Medium large dutch oven put in Canola oil and fry ham on each side till slightly brown. Remove the ham and chop into med size pieces. Add back to Dutch Oven and add onion, bell pepper, Garlic Cloves, and cook until onion and peppers are almost tender. .add garlic salt and cayenne pepper and cook till tender. Add Kidney beans and stewed tomatoes. Then add cheese. cook over low heat while rice is cooking using the directions on the box. Fluff rice and add to Dutch Oven. Mix well, cook on low till the moisture in gone. You can cook rice first if you want. Serve and enjoy.

I am especially interested in baking and coming up with new recipes. I still like learning from others. I like to find a way to to cut calories , carbs and sugar. Being diabetic and liking sweet things presents me with quite a challenge .
