Beer Mop Sauce for Poultry and Fish

• Yields: 2-3 cups
• Serves: 4-6

ingredients

• 12 ounces beer
• 1⁄2 cup lemon juice, fresh
• 1⁄2 cup canola oil or 1/2 cup corn oil
• 1⁄2 medium onion, chopped
• 2 garlic cloves, minced
• 2 tablespoons dry rub seasonings
• 1 tablespoon white wine worcestershire sauce or 1 1/2 teaspoons Worcestershire sauce

directions

1. Mix all ingredients together.
2. If meat seems dry when smoking, add another 1/4 cup oil.
3. Apply using a small string mop for barbecue or with a small pastry brush.
