Beef and Broccoli Stir-Fry

- 3⁄4 lb beef, cut into very thin strips, pencil thin and no longer that 2 inches in length
- 3 cups broccoli florets, bite sized
- 2 garlic cloves, minced
- 2 tablespoons soy sauce (not lite)
- 2 1⁄2 tablespoons white sugar
- 1⁄2 teaspoon black pepper
- 1 egg white, beaten until frothy
- 1 tablespoon cornstarch
- 2 tablespoons sherry wine
- 1⁄4 cup oyster sauce
- 3 -4 tablespoons vegetable oil
directions
- In a medium mixing bowl add together the beef strips and soy sauce.
- Mix to be sure all the beef is coated.
- Add the sugar and pepper, stirring for 3 minutes to be sure each piece is evenly coated and sugar is dissolving.
- Add the whipped egg white and slowly stir in the cornstarch, again stirring for 3 minutes to make sure the beef is evenly coated.
- You DO NOT want to see any sugar or cornstarch.
- Cover and let stand in the fridge for 3 hours, stirring well after 1 and 1/2 hours.
- Bring a large pot of water to boil.
- Bring a wok to medium high heat.
- Par boil the broccoli for 1 minute.
- Drain in colander in sink.
- Add 2 T. oil and garlic to wok and quickly"mush" around.
- Stir fry the broccoli until tender crisp, around 5-6 minutes tops.
- Remove broccoli to a bowl.
- Add the remaining oil if needed and stir fry the meat until just under done.
- Return broccoli to wok and stir.
- Add the sherry and oyster sauce.
- Stir fry for 1 minute making sure broccoli and beef is thoroughly coated with sauce.
- Serve over hot white rice.

I tweaked the recipe a bit for my tastes, and it came out very flavorful, and delicious. I added about 1/4 tsp of ground ginger to the marinade, and 1 large clove of minced garlic. I doubled the recipe, since I used a beef roast. I let it marinade for the 3 hours, and it was perfectly tender. I also chopped up a 1/2 an onion into strips to stir-fry with it. I just dumped all the meat into my pan, the onion, and the broccoli and fried it all up together for about 10-15 min. until the meat was done. Came out wonderful, and no other pan to clean up! The broccoli was frozen to begin with and was tender crisp when the meat was finished. Thanks for a great recipe!

This was excellent!! Didn't have time to marinate the full 3 hours, so it was almost 1 hour. I used NY Strip (a little pricey, but worth it to me). Like another rater, I am too lazy to parboil and dirty another pan. I used about an inch of water in the bottom of the wok and cooked the broccoli a few minutes this way. I found that this made it so I didn't have to use as much oil when I stir fried the broccoli (will definitely use this technique again). I threw a handful of peanuts on the top of mine when done. This is going to be a favorite! I can't wait to try it again fully marinated!

Nice meal. The meat was very tender so I recommend marinating as directed. I doubled the recipe so that we would have leftovers and added onions to the batch. Next time I will cut back on the oyster sauce by a tablespoon or so. I would use 3 T sherry if doubling. Thanks dibs for a tasty meal that we enjoyed.

i followed everything to the T except i substituted chicken stock and the another time mirin for the sherry wine since i had none. both came out delicious and very flavorful. some mentioned they didn't really like this at the restaurant because it was too salty when they ordered. my problem was that it was always bland. but this recipe seriously is full of flavor. not the typical bland beef and broccoli that i'm used to ordering. kids and i absolutely loved it. they asked for 2 servings which is rare for them. only regret i had was using a cheap cut of meat. it was a little tough but that's not the recipe's fault...it was my fault for chosing a sucky piece of meat. can't wait to make this again...will go into my favorites file.
