ingredients
- 1 cup cornmeal
- 1⁄2 cup flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- 2 cups milk
- 1⁄4 cup shortening, melted
- 1 egg, beaten
- 2 tablespoons honey
- 4 cups brown beans, cooked and drained
directions
- Mix all but beans thoroughly.
- Fold in beans.
- Pour into hot greased pan.
- Bake at 450 for 30 minutes or until brown.

Well this was a very interesting and unusual bread! I used baked beans and rinsed/drained them well to remove all of the sauce. I made this just as directed and it came out very soft and mushy, almost like a corn pudding. The texture was a little odd but the flavor was pretty good - I plan to try it again and add enough extra flour and cornmeal to produce something more like a cornbread. Not the same-old-same-old - thanks for posting this!
