  • Mash banana.
  • Beat eggs and egg whites. Stir in sugar and cinnamon.
  • Blend banana into egg mixture.
  • Add matzo meal and combine well.
  • Let stand about 5 minutes until thickened.
  • Spoon pancake size amounts onto sprayed griddle. Turn when browned.
