Banana, Beans, Corn and Greens from Tanzania

"Found this in my great banana recipe search. My bananas frequently ripen all at one time. In Tanzania it is either served next to a grilled meat or as a meal."

  • 6 green bananas, peeled and mashed
  • 4 ears of corn, shucked and off cobb (I cheat with frozen out of season)
  • 2 cups green beans, cut to 2-inch
  • 1 bunch greens, large and chopped (any you have, collards, spinach, cabbage, pumkin leaves, chaya, etc.)
  • 2 cups coconut milk (regular milk ok)
  • salt

directions

  • Zap the corn and beans al dente in your microwave.
  • Add bananas. Cook for about 10 minutes on top of the stove.
  • Add greens and cook til just done.
  • Add milk, mix well and reheat without boiling.
  • Season to taste and serve hot or cold.
