Banana, Beans, Corn and Greens from Tanzania

ingredients
- 6 green bananas, peeled and mashed
- 4 ears of corn, shucked and off cobb (I cheat with frozen out of season)
- 2 cups green beans, cut to 2-inch
- 1 bunch greens, large and chopped (any you have, collards, spinach, cabbage, pumkin leaves, chaya, etc.)
- 2 cups coconut milk (regular milk ok)
- salt
directions
- Zap the corn and beans al dente in your microwave.
- Add bananas. Cook for about 10 minutes on top of the stove.
- Add greens and cook til just done.
- Add milk, mix well and reheat without boiling.
- Season to taste and serve hot or cold.
