Balsamic Glazed Salmon With Strawberry Salsa

- 3⁄4 lb salmon
- 2 tablespoons balsamic vinegar
- 3⁄4 cup diced strawberry
- 2 tablespoons cilantro
- 1 1⁄2 teaspoons diced jalapenos
- 1 tablespoon diced green onion
- 1 teaspoon lime juice
directions
- 1. Place salmon fillet on a baking sheet and use a pastry brush to brush it with a few coats of balsamic vinegar. Reserve the rest of the balsamic for later. Season salmon with a dash of salt and pepper.
- 2. Bake salmon for 15-20 minutes until cooked to your desired level of doneness. For well done fish, you may need to add a couple of extra minutes in the oven.
- 3. When salmon is cooked, brush a bit of the remaining balsamic vinegar over the top. Top salmon with strawberry salsa and serve immediately.
- 4. Combine strawberries, cilantro, jalapeño, green onion, lime juice in a medium bowl.
- 5. Add salt and pepper to taste.
- 6. Store salsa in the fridge until you're ready to serve.

Started washing dishes in restaurants (the Moose Lodge to be precise) at 13. Worked at a bunch of Long Island restaurants from 14 to 18, did salad prep, sous, breakfasts, line, short order and whatever role was open. Loved it, and kept cooking when I went into the Army at 18. By 22, stopped cooking for work, but still cook at home a lot. Now, I actually think I am a better cook than ever, and have even considered opening my own restaurant some day.
