- 5 sweet potatoes, washed peeled and cubed
- 1 ounce raisins
- 1 ounce chopped pecans
- 1⁄4 cup butter, melted (omit for Vegan version)
- 1⁄2 cup maple syrup
- 1⁄2 cup water
directions
- Preheat oven to 400 degrees.
- Spread sweet potatoes in a single layer in a 9x13 inches baking dish.
- Sprinkle with raisins and chopped pecans.
- In a small bowl, mix butter, syrup and water together.
- Pour mixture over over potatoes.
- Cover baking dish with aluminum foil.
- Bake for 50-60 minutes, until potatoes are tender.
