ingredients
- 1 1⁄2 cups rolled oats
- 1⁄2 cup dried fruit, chopped
- 3⁄4 cup mashed banana
- 1 teaspoon kosher salt
- 1 1⁄4 cups skim milk
- 2 egg whites
- 1 teaspoon vanilla
directions
- Preheat oven to 350*.
- Mix dry ingredients.
- Mix wet ingredients.
- Pour wet into dry. Stir to combine.
- Pour into a square 8 x 8 / 9 x 9 inch baking dish, coated in cooking spray or lined with parchment.
- Bake for 40 minutes.
- Cut into 12 squares.

These were delicious but a bit wet. I might have under cooked them a bit so next time I'll either cut a little milk or make sure I give them the full 40 mins. Also next time I would add 1 tsp. Cinnamon and maybe 1/2 tsp. of nutmeg or allspice for a little kick. I think walnuts would be good in these as well.
