  • Put enough water in large pan to cover the leeks and bring to a boil Cover anbd cook gently until leeks are very tender and easily pierced with a knife point.
  • Drain.
  • Add olive oil and lemon juice Season with salt and pepper Sprinkle with parsley and serve.
