Avocado Pesto Toast Egg

- 1⁄4 cup pine nuts, toasted
- 3 ripe avocados
- 4 garlic cloves, pealed
- 3 tablespoons lemon juice
- 1⁄4 teaspoon salt
- 1⁄2 cup basil leaves
- 4 slices toasted bread
- 4 eggs
directions
- Toast the pine nuts and cool.
- pit and scoop the avocados.
- add everything but the bread and eggs to the food processor pulse to blend until pesto consisity. taste and adjust salt if required.
- if there isn't enough mixture to process add one more avocado Sometimes you need more lemon juice as well.
- spread thickly on the each toast and top with an over easy egg or your preference of egg.
- depending on the size of the avocados there will probably be enough for an everyone to have an extra slice.

I always barbecued and camp cooked but now that I am retired and my wife is disabled I do almost all the cooking. My preference is for recipes that are fairly simple with over the top results.
And most important I still ride my 1940 Indian!!
