  • Toast the pine nuts and cool.
  • pit and scoop the avocados.
  • add everything but the bread and eggs to the food processor pulse to blend until pesto consisity. taste and adjust salt if required.
  • if there isn't enough mixture to process add one more avocado Sometimes you need more lemon juice as well.
  • spread thickly on the each toast and top with an over easy egg or your preference of egg.
  • depending on the size of the avocados there will probably be enough for an everyone to have an extra slice.

I always barbecued and camp cooked but now that I am retired and my wife is disabled I do almost all the cooking. My preference is for recipes that are fairly simple with over the top results. And most important I still ride my 1940 Indian!!
