For the Filling
- 7 firm apples (Best for baking ( Cortland, Macoun, Granny Smith, Honeycrisp, Empire or MacIntosh)
- 1 teaspoon grated lemon zest
- 2 tablespoons fresh lemon juice
- 1⁄4 cup granulated sugar
- 1⁄4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon ground nutmeg
- 1⁄4 teaspoon clove

For the topping
- 1 1⁄2 cups all-purpose flour
- 1⁄2 cup granulated sugar
- 1 cup light brown sugar, lightly packed
- 1⁄2 teaspoon kosher salt
- 1 cup old-fashioned oatmeal
- 1 cup cold unsalted butter, diced
directions
- 1. Preheat the oven to 350 degrees F.
- 2.Peel, core, and slice apples.
- 3.Place the fruit in a large bowl and add the zest, juice, sugar, flour, and spices.
- 4. Pour into a 9 by 12 by 2-inch baking dish.
- For the topping:.
- 1.Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment.
- 2.Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
- 3.Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve and enjoy!

This makes a very good apple crisp. I specifically liked that there was lots of the filling around the apples. The flavor was really nice. The spices blended well without overpowering the apples. I used some apples which had been sitting on the island for too long and which were almost past their time. After I peeled, cored, and sliced them I let them soak in some cold water and extra lemon juice which rejuvenated them to the point that you would never have known they weren't fresh off the tree. Great recipe to use overripe apples with as well as crispy ones. Made for Spring PAC 2010
