  • Heat salted water to a boil in a large saucepa.
  • Add asparagus; cook just until tender, about 5 minutes, depending on size.
  • Drain well, shaking to remove all water.
  • Transfer to a serving bowl; lightly toss with butter, vinegar, lemon zest, and salt to taste.

  3. I've used this recipe twice now. Once I replaced the seasoned vinegar with fresh squeezed lemon and finely diced Chervil and parsley. Both times I added a few peeled rock shrimp during the last 3 minutes of cook time. Hmmmm good!

The addition of the rice vinegar made this recipe interesting and different from my usual butter/lemon seasonings. I sprinkled some salt on top since I always use unsalted butter. We liked it!
