Artichoke Fajitas

- 1 large onion, sliced and quartered
- 1 bell pepper, sliced and quarted
- 1 (7 ounce) can artichoke hearts, quarted
- 8 tortillas, whole grain (I use LaTortilla multi grain)
- 1 1⁄3 cooked brown rice (cooked in broth)
- 2⁄3 cup smoked gouda cheese, grated
- 1⁄2 cup fat free sour cream
- 1⁄2 cup salsa
directions
- Saute onions and bell pepper until tender. Add artichoke hearts and continue to saute until artichokes are hot.
- Warm tortillas, we just place on a gas burner for a few seconds and then place in a tortilla warmer. You can also warm in the microwave and then wrap in plastic to retain moisture.
- Layer rice, artichoke heart mixture, cheese, sour cream, and salsa on warm tortilla. Roll up and serve immediately.

A combination of red and yellow bell peppers were used to pump in some color. The most important change was I cooked the onions and bells quickly on high heat in a wok. That way the colors are maintained which wouldn't be the case if they are sauteed until tender. I didn't care for the cheese in the fajitas and with my second helping I skipped it all together. I think a Parmesan would work better in this particular recipe or a smoked cheddar. Fresh cilantro to garnish. Reviewed for Veg Swap #19-2010.

A very different fajita indeed! I like artichokes but i am not a huge fan. If you do, this is a fajita for you! I was recently on Jenny Craig and i had a fajita kit. I had chicken, onions, and peppers in the meal. I cooked it up in the skillet and added some artichokes. I believe this is more of a burrito but since i skipped on the rice, it was a fajita. The sour cream and salsa i had on the side! i don't want everything to get soggy. The sour cream is very important! It balances the tangy artichoke flavor...
