- 1 1⁄2 cups quick-cooking oats
- 1 1⁄4 cups white whole wheat flour
- 1⁄2 cup packed brown sugar
- 1 teaspoon baking powder
- 3⁄4 teaspoon baking soda
- 1 1⁄4 teaspoons ground cinnamon
- 1⁄2 teaspoon salt
- 1 cup unsweetened applesauce
- 1⁄2 cup buttermilk
- 1 tablespoon canola oil
- 1 teaspoon vanilla
- 1 egg
- 1 cup finely chopped apple
- 1⁄4 cup oats, for sprinkling on top
directions
- Preheat oven to 400 degrees. Spray 10 standard muffins cups with nonstick spray or line with paper liners.
- In large bowl, combine oats, flour, sugar, baking powder, baking soda, cinnamon, and salt. Stir to combine.
- In separate bowl, stir together the applesauce, buttermilk, oil, vanilla nut extract, and egg. Add to dry ingredients and stir just until combined, being careful not to overmix. Fold in chopped apple.
- Divide batter evenly among prepared muffin cups, filling all the way to the top. Sprinkle with 1/4 cup oats.
- Bake in preheated oven for 18 - 20 minutes or until tops are brown and toothpick inserted into the center comes out with only a few moist crumbs. Cool slightly in muffin tin before removing to wire rack.
