  • Beat egg whites on highest setting until they form still peaks.
  • Add cream of tartar, vanilla, and almond extract.
  • In another bowl, whisk together flour, sugar, and salt.
  • Gradually add flour mix to egg white mix, beating well.
  • Pour into an ungreased 10 inch tube pan.
  • Place cake pan in oven while its off. set it to 325F.
  • Cook for 1 hour (including preheat time) until golden brown.
  • Turn upside down on a plate.
  • When completely cooled, extract with a spatula.
