- 8 eggs, hard boiled and peeled
- 2 tablespoons oil
- 1 onion, finely chopped
- 1 teaspoon ginger, grated
- 3 garlic cloves, crushed
- 3 bay leaves
- 14 ounces crushed tomatoes
- 1⁄4 teaspoon ground turmeric
- 1⁄2 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon garam masala
directions
- Heat the oil in a saucepan. Add the onion, ginger, garlic, and bay leaves, and cook for four minutes, or until the onion is soft. Add the tomato, turmeric, chili powder, cumin, coriander, 1 tsp salt, and 1 cup of water.
- Bring to a boil, then reduce heat and simmer for three minutes.
- Add the garam masala and eggs, then simmer for a minute or two to warm the eggs.

This was a very nice hot dish to have as a light lunch. We served on toasted rye bread to soak up the sauce. A nice heat kick , however found that the garam masala was a bit too much for our tastes & will cut back next time. But really liked how quick it was to make with spices that I normally keep on hand. Thank you Cluich. Made for PAC 2009
