Almond Flour Stevia Cookies

"This is a basic cookie made with real whole foods. You can spice it up by subbing a different flavor extract. Next time I am going to try adding a 1/4 cup of dark baking chocolate powder and maybe some coconut. I am excited about trying different variations."

  • Preheat oven to 300°F.
  • Soften real butter.
  • combine soft butter and remaining ingredients.
  • electric mix until smooth.
  • form 16 balls and place on ungreased cookie sheet.
  • bake 20 minutes, stopping at 7 minutes to flatten with fork.

  1. I only need the recipie to bring wheat free not sugar free (although low sugar is ok). Can I use half the stevia and use brown sugar for the rest?

  1. These cookies were incredible. I tried multiple different recipes and all came out disappointing, but these turned out exactly as I wanted. The texture was perfect and they tasted great!

I made these today, they smelled incredible, texture was fantastic BUT they were not sweet enough at all.. the flavor of the almond and butter overpowered the sweet aspect and they tasted bitter almost. I would suggest adding more stevia and possibly chocolate chips or spices to mask that weird bitter taste.

  5. I've wanted gluten-free pfferneuse cookies for a while, so I used this as a base and added: pinch of black pepper, 1 Tablespoon cinnamon, 1 teaspoon cardamon, 1/2 teaspoon ginger (might add less next time), 1 teaspoon nutmeg, pinch cloves. They are yummy!
