Alcohol-Free Orange Tiramisu

"I adapted this recipe from one I saw on TV that used Lemoncello. I found that a bit too bitter for my taste and experimented until I came up with this combination."

  • Arrange lady fingers in a rectangular baking dish.
  • Combine OJ, 1 tablespoon sweetener of choice, and egg yolk in blender and mix on high speed.
  • Pour mixture over ladyfingers.
  • In a mixing bowl combine Mascarpone, milk, and 1 tablespoon sweetener of choice. Starting on low speed with hand mixer beat ingredients until smooth.
  • Spread Mascarpone over ladyfingers evenly.
  • Drain Mandarin oranges. Arrange over top of Mascarpone. Immediately refrigerate for a minimum of 2 hours.
  • Serve with a topping of whipped cream if desired.

My "fun" interests include reading (science fiction mostly), movies and television (again, I love sci fi), cooking (and eating it, but need to go on a diet (LOL), collecting 60's music, and watching my children grow. My all time favorite cookbook is the Betty Crocker Home cookbook. I have a great Hungarian cookbook that has all the recipes that I remember from my childhood being prepared by my Grandparents and my Mother.
