Alcohol-Free Orange Tiramisu

- 12 ladyfingers
- 1⁄2 cup orange juice
- 2 tablespoons Splenda sugar substitute or 2 tablespoons sugar, divided
- 1 egg white
- 2 (12 ounce) containers mascarpone
- 1⁄2 cup whole milk
- 1 (15 ounce) can mandarin oranges
directions
- Arrange lady fingers in a rectangular baking dish.
- Combine OJ, 1 tablespoon sweetener of choice, and egg yolk in blender and mix on high speed.
- Pour mixture over ladyfingers.
- In a mixing bowl combine Mascarpone, milk, and 1 tablespoon sweetener of choice. Starting on low speed with hand mixer beat ingredients until smooth.
- Spread Mascarpone over ladyfingers evenly.
- Drain Mandarin oranges. Arrange over top of Mascarpone. Immediately refrigerate for a minimum of 2 hours.
- Serve with a topping of whipped cream if desired.
