15 Minute Orange Tiramisu

- i package ladyfinger (12)
- 1 cup orange juice
- 1 egg white
- 2 (8 ounce) packages mascarpone
- 1⁄4 cup whole milk
- 1 (15 ounce) can mandarin oranges
- 2 tablespoons sugar or 2 tablespoons Splenda sugar substitute, divided
directions
- Place lady fingers in high wall ceramic or glass dish.
- Combine orange juice, egg white, and 1 tbl sugar or splenda in blender. Blend on high speed for 30 seconds.
- Pour orange juice mixture over lady fingers and allow to sit for 15 or more minutes until the lady fingers have softened.
- With hand mixer or whisk blend mascarpone, milk, and the second tbl sugar or splenda until well combined.
- Spread mascarpone over lady fingers evenly.
- Drain mandarin oranges and once drained spread over mascarpone layer.
- Chill in refrigerator for at least two hours.
- Covered will stay fresh for at least two days.
