15 Minute Orange Tiramisu

  • Place lady fingers in high wall ceramic or glass dish.
  • Combine orange juice, egg white, and 1 tbl sugar or splenda in blender. Blend on high speed for 30 seconds.
  • Pour orange juice mixture over lady fingers and allow to sit for 15 or more minutes until the lady fingers have softened.
  • With hand mixer or whisk blend mascarpone, milk, and the second tbl sugar or splenda until well combined.
  • Spread mascarpone over lady fingers evenly.
  • Drain mandarin oranges and once drained spread over mascarpone layer.
  • Chill in refrigerator for at least two hours.
  • Covered will stay fresh for at least two days.

I was born in Detroit, Michigan and moved to Miami, Florida in 1976. I moved to Franklin, NC at the beginning of 2005 and back to Detroit 12 years later. My "fun" interests include reading (science fiction mostly), movies and television (again, I love sci fi), cooking (and eating it, but need to go on a diet (LOL), collecting 60's music, and watching my children grow. My all time favorite cookbook is the Betty Crocker Home cookbook. I have a great Hungarian cookbook that has all the recipes that I remember from my childhood being prepared by my Grandparents and my Mother.
