Aioli Aka Garlic Dip, Sauce or Spread

"From the website www.greenwheatfreekeh.com.au this recipe is for a wonderful garlic dip or garlic sauce. Went to an Arabic store in Toledo (yippee, found one!) and bought something called 'freekeh'. Never having heard of it before, I did an Internet search. This website has plenty of (metric) recipes. I have not tried this one yet."

• Yields: 500 ml
• Serves: 8-10

ingredients

• 50 g garlic, bulb
• 6 egg yolks
• 50 ml lemon juice
• 400 ml olive oil
• 1 pinch salt
• 1 pinch pepper

directions

1. Remove all skin from the bulb of garlic.
2. Blend first four ingredients in a small food processor.
3. Add salt and pepper to taste.
4. May be used as a dip or a sauce for anything that should have a bite of garlic.
5. Enjoy!
