  • Mix Tabasco, and water in a large bowl and marinate chicken in the fridge for an hour (or more; the longer it marinates, the more flavorful it gets!).
  • Grind uncooked oatmeal in blender.
  • Mix oatmeal with cayenne pepper and chili powder in a shallow bowl.
  • Roll chicken in oatmeal mixture and lay on a foil-lined baking dish.
  • Brush with egg white on face up side.
  • Bake for about 25-30 minutes at 350 degrees.
  • Turn over chicken and brush other side with egg white.
  • Bake for another 15-30 minutes until golden brown.
