- 1 lb lean ground beef
- 2 teaspoons minced garlic
- 2 (14 ounce) cans Italian-style diced tomatoes
- 1 (24 ounce) jar marinara sauce
- 2 cups reduced-sodium beef broth
- 1 teaspoon italian seasoning
- 2 cups lasagna noodles, broken into small pieces
- 1⁄2 cup ricotta cheese
- 1 cup Italian cheese blend, shreded
directions
- Boil the broken lasagna noodles until al dente.
- In a Dutch oven, brown beef until no longer pink.
- Add garlic and cook for 1 minute.
- Pour in diced tomatoes and their juice and simmer for 2 min.
- Add beef broth, marinara sauce , Italian seasoning and cooked pasta.
- Simmer for 5 minutes.
- 5 min before serving, swirl in ricotta cheese.
- Sprinkle top with shredded cheese and put lid on pot until cheese melts.
- Serve hot.
