These are amazing!! They have great flavor (with just the right amount of sweetness) and a wonderful moist texture--plus, they rise perfectly! My DH and I really enjoyed them, even though neither of us usually likes bran muffins all that much. I scaled the servings down to 6; and used whole wheat pastry flour, sodium-free baking powder, light olive oil, fresh orange zest (we have orange trees in our backyard), and golden raisins. Delicious! I've been looking for recipes that include some of the foods we'd like to eat more often (like oat bran)--and this one is a winner! I look forward to making these again! Thanks so much for a great recipe, Moogliwoogli!! (Tagged, made, and reviewed for Healthy Choices ABC Game.)
