Yummy Bran & Flax Muffins

"Lightly sweet and heart healthy. Uses oat bran and flax seeds which are high in omega-3 fatty acids. This recipe is an adaptation of one we found on the University of Virginia Cancer Center website. This version adds heart healthy oat bran plus a few other yummy things like vanilla and orange peel. Diabetics could substitute the brown sugar for splenda & brown sugar mix."

  • Preheat oven to 375°F.
  • Line muffin pan with paper liners (12) or coat the muffin tins lightly with cooking spray.
  • In a large bowl, combine dry ingredients and set aside.
  • Beat the applesauce, eggs, oil, brown sugar, vanilla and orange peel with a fork until well mixed. Note: the liquid ingredients will all fit in a 2c measuring cup with enough room to mix them together.
  • Pour into dry ingredients and mix by hand being careful not to over mix.
  • Fold in nuts and dried fruit.
  • Spoon batter into muffin cups and if desired, sprinkle with a bit of oatmeal flakes.
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 5 minutes before placing on a cooling rack.
  • Freezes well if placed in a zip lock bag. Just microwave 15-30 seconds to reheat.

  1. These are amazing!! They have great flavor (with just the right amount of sweetness) and a wonderful moist texture--plus, they rise perfectly! My DH and I really enjoyed them, even though neither of us usually likes bran muffins all that much. I scaled the servings down to 6; and used whole wheat pastry flour, sodium-free baking powder, light olive oil, fresh orange zest (we have orange trees in our backyard), and golden raisins. Delicious! I've been looking for recipes that include some of the foods we'd like to eat more often (like oat bran)--and this one is a winner! I look forward to making these again!   2. So far my favorite flax muffin! I didn't have orange zest, but I added a drizzle of molasses. These had a nice springy texture and made eating flax seeds easy! Thanks for posting. Roxygirl
     
  3. Very good for you muffins. Love the texture of these. I ground the flax seed then measured a 1/4 cup. Also used canola oil. The orange zest gave it a nice fresh taste. I got 11 nice sized muffins using a large scoop, baked up in 17 minutes. Thanks for sharing this recipe.
     
  4. Loved these muffins and loved the healthy ingredients! Used extra light olive oil and fresh orange zest, otherwise as stated. These will be regulars in my freezer muffin stash. Thanks for sharing the recipe!
