- 118.29 ml butter, softened
- 236.59 ml brown sugar
- 118.29 ml coconut flakes, finely minced
- 1 egg
- 14.79 ml milk
- 4.92 ml vanilla
- 354.88 ml flour
- 9.85 ml baking soda
- 2.46 ml baking powder
- 2.46 ml salt
- 226.79 g solid white baking chocolate, cut into chunks
- 236.59 ml macadamia nuts, chopped
directions
- Cream together the butter and sugar in a large bowl with a mixer on high speed. Add the coconut, egg, milk, and vanilla; mix well.
- In another bowl, combine the flour, baking soda, baking powder, and salt.
- Add the dry mixture to the wet mixture and mix until dough forms. Mix in the white chocolate and macadamia nuts.
- Preheat the oven to 300 F while you let the dough rest for 30-60 minutes in the refrigerator.
- Measure out about 2 1/2 tablespoons of the dough and form a ball. Drop each ball of dough onto an ungreased cookie sheet about 3 inches apart and bake for 12-14 minutes.
- Do not overbake! Cookies should come out of the oven appearing slightly browned, yet undercooked.
- When cooled, the cookies will be soft and chewy.

Love these cookies! I did not use the coconut flakes (personal preference). Believe it or not, I had to use a combination of milk and sour cream to fulfill the measly 1 TBS of milk!!! LOL...must have been a crazy cereal morning for the kids! But I was loaded in the white chocolate department and tried to make up for my shortcomings by adding 2 more oz. - not a wise decision on my part, because it was overkill. I never thought you could have too much white chocolate, but I was a bit too zealous (although my kids disagree!). Overall, very simple to make and was delicious. Now only if I had a glass of milk to go with my cookies!! Thank you!

Turned out perfectly! I did not use the coconut because the people I made these for are not coconut fans, but other than that I recommend following this recipe exactly as written! Do not skip on the refrigeration part, or your cookies won't end up as chewy. I made this mistake with my first couple batches, but it was easily fixed, as we were making double the recipe anyway! Thanks for posting, its a keeper!

(Thanks again to my wonderful husband!) My oldest daughter loves to help in the kitchen and wants to eat what she cooks, so that's helping broaden her eating horizons! My youngest daughter is still pretty picky, but we're dealing! Thank goodness my husband is gracious enough to eat whatever I cook. (I guess he knows that if he complains, he'll be asked to do the cooking himself!!)
